Garden Goodies

A study in green today for all of you. The green beans are doing well and this is my morning chore and will be for several days.
This day ended up being ALL green and I couldn't resist the pic of all the yumminess and richness of the same color.Recently, I came across an old booklet of 'suggestions' for the new Texas Tech coed. We must keep in mind this booklet was published in the 1930's. There are suggestions about personal appearance, courtesy, and the house rules of the dormitories among other tidbits of information for the well-rounded young lady. I'm not talking about a gal who's been eating too many Twinkies either! I will try to remember to add a couple of these tidbits to my blog occasionally for an added chuckle...or two.
The first page even starts off with a bang letting the gal know that what she needs to bring for a COMPLETE wardrobe is 2 skirts, 3 sweaters and 2 or 3 'wash' blouses. I've never heard that term before, but I can bet the sales clerk at the boutique would do a double take if I go in and ask to see their 'wash' blouses!! It goes on to let you know to use your discretion and get these in colors that will harmonize as to create several different costumes. OK, now I know I'll need a party hat NOW!! In the first place I can't see girls today taking so few items! Another tidbit of info that hasn't changed at all is the head's up about Lubbock weather. It states clearly that the changes in Lubbock weather are swift and you may find it necessary to carry a heavy coat to put on before the game is over. That nails it on the head for sure. I've always laughed at how we wear our coats over a layer of shorts and tank tops around here!

My garden over runneth....

Our garden is in full swing and I wish you were all here to reap the bounty! This is just a very small portion of the tomatoes that were eventually plucked from the vine. They covered my counter when done. I've passed many on to friends and I will freeze the rest for the soups and stews to come in the cooler weather. YUM! The banana peppers and gypsy peppers are equally prolific. This is all just one day's pickins. I was searching the web for pepper recipes. I came across an easy one for a pepper casserole. It is below for the sharing.Banana Pepper Casserole
10 banana peppers
8 oz. Velveeta cheese
1 Cup cooked rice
1 can biscuits, 5 ct.
1 can Rotel, drained

Split banana peppers open and remove seeds & veins. I plan to parboil the peppers next time to make them just a bit more tender. I left them whole with a split down one side.
Cube cheese and microwave til melted. Stir rice into melted cheese. Stuff each pepper with the cheese/rice mixture.
Roll each biscuit very thin and cut in half. The recipe didn't say what to do with this, but I think they intended that you wrap each pepper with the dough. I placed the whole, thin biscuit across the top.
Place peppers into a greased baking dish. Spoon Rotel over peppers, keeping liquid to a minimum.
Bake 400 degrees until biscuits are flaky.

This was fast and easy and I'll make it again. Hope it turns out for you too.

A thought that matches today's economic situation:

If you outgo exceeds your income, then your upkeep will be your downfall.

Chester at play



Here is the update on our little rescue cat, Chester. I had forgotten how entertaining a kitten can be and every day we have a great laugh at kitty's expense. We must keep in mind it is a country cat and it's fav toys are a semi-round rock and owl feathers that we find in the yard. Nothin's too good for this cat!! I had a couple of toys I keep here for our 'grand-cat' when it comes to visit and I pulled those out for Chester and she loves to chase the balls around. It's lip has healed well and will have a scar. It's broken leg isn't bothering her too much and isn't causing any pain. I do believe it is getting much stronger with it's pampered diet and constant play.

Just this week her safe zone enlarged a bit and she will accompany us to collect veggies. She is thinking she is a panther and the garden is her jungle. We have been lunged upon from the asparagus more than once and our giant zucchini plant is perfect shade for supervising us.
Chester kitty needs to learn to help with the house now that gardening is perfected.
A final thought....A balanced diet is a cookie in each hand.
